Spicy Chicken with chorizo
As I started my day this morning I came up with something special for our dinner and I got a spicy chicken recipe to share here. Sound spicy and really yummy!
Spicy Chicken with chorizo
Ingredients
1 large brown onion, skin on,
thickly sliced into rings
1 hot chorizo sausage, thinly sliced
6 chicken Maryland,
cut into thighs and drumsticks
and backbone removed
1 whole garlic bulb, smashed, skin on
6 whole sprigs rosemary
Sea-salt flakes
Freshly ground black pepper
2 Tbsp olive oil
80ml vinegar
Skordalia
5 desiree potatoes, peeled
and cut into chunks
2 large garlic cloves, peeled
1/2 cup olive oil
1/2 cup milk
Cooking Procedure:
1. Preheat oven to 190°C (170°C fan-forced). Arrange onion in the base of a medium baking dish. Push about 2 slices of the chorizo under the skin of each chicken piece and arrange the pieces snugly in the baking dish. Scatter over the garlic and rosemary. Season well with salt and pepper and drizzle over olive oil. Bake for 40-50 minutes or until chicken is tender. Pour over vinegar and set aside to rest. Serve the chicken with the pan juices and a bowl of skordalia.
